4 oz / 100g oil
4 oz / 100g soft brown or caster sugar
2 eggs
6 oz / 170g self-raising flour
2 ripe bananas (mashed)
1 tsp vanilla
1/4 tsp salt
1 or 2 tbsp cocoa powder
Method
Pre-heat oven to gas mark 4 / 160°C and grease a loaf tin
Mash bananas in a large mixing bowl
Add the oil, sugar, eggs, flour, vanilla and salt.
Beat well and pour half of the mixture into a greased loaf tin
Mix the cocoa powder into the rest of the mixture
Pour the chocolate mix into the loaf tin and swirl around with a fork (not too much)
Transfer to oven and cook for approx. 40 minutes.
Test with a skewer and return cake to the oven for another 5-10 minutes if necessary.
Cool under a tea towel for at least an hour before removing from the tin and slicing.
