PEANUT BUTTER BROWNIES


100g/4 oz soft margarine
100g/4 oz caster sugar
2 beaten eggs
100g/4 oz self-raising flour
1-2 tbsp peanut butter
1 tbsp clear honey
3 heaped tbsp cocoa powder
2 tbsp yoghurt

For the butter cream:

50g margarine
A few hundred grams of icing sugar
Vanilla essence
A couple of tbsp of skimmed milk

Method

Pre-heat oven to gas mark 4 / 160°C
In a mixing bowl, add a little hot water to the cocoa and mix until soft butter-cream consistency
Mix in margarine and sugar, beat until smooth
Beat in eggs, yoghurt and honey
Fold flour into mixture
Mix in peanut butter
Pour into greased tin (approx. 9” square)
Bake for about 25-30 minutes
When cooled, spread butter cream over the top.
