BANANA BREAD
4 oz soft margarine
6 oz soft brown sugar
2 beaten eggs
8 oz self-raising flour
2 ripe bananas (mashed)
4 oz fruit (dates, sultanas, cherries)
Method
Pre-heat oven to gas mark 4 / 160°C
Cream together sugar and margarine
Beat in eggs
Fold flour into mixture
Mix in mashed bananas and dried fruit
Pour into greased loaf tin
Transfer to oven and cook for approx. 1 hour
