BOLOGNESE SAUCE


2 tbsp olive oil
2 garlic cloves
1 pack of sliced Pancetta, chopped
Half a large onion
500g minced beef or pork
A few dashes of red wine
1 tube tomato puree
A large can of chopped tomatoes
Salt, Pepper, Oregano, Basil

Method

Heat the oil in a pan.
Chop the garlic and onion, add to pan.
Add Pancetta, and fry until tender.
Add minced meat, stir until cooked.
Drain off excess fat.
Add wine, cook until slightly reduced.
Add chopped tomatoes & tomato puree.
Add salt, pepper, oregano and basil
