FOCACCIA


400g/15oz Strong White Flour
1 ¼ tsp Sea Salt
2 tbsp tomato puree
1 tbsp basil
1 tbsp oregano
1 x 7g Sachet Easy Bake Yeast
225ml/8 fl oz warm Water
2 tbsp Honey
3 tbsp Olive Oil
Handful of chopped sundried tomatoes/olives/caramelised onion/garlic

Method

Put the dry ingredients into a bowl and sprinkle on the yeast.
Mix to a soft dough with the water and honey.
Turn onto a floured board and knead for 10 minutes.
Leave in the bowl with a plastic bag over the top, in a warm place for 2 hours.
Shape the dough into a circle.
Place onto a greased baking sheet and dimple the surface with your fingertips.
Leave to prove until double in size. Brush with olive oil.
Bake at 190°C/375°F/Gas Mark 5 for 30 minutes.
